Baked Eggplant Casserole - CDKitchen.com

ingredients

1 medium eggplant
1 egg, beaten
1 1/2 cup canned or fresh tomatoes
2 tablespoons olive oil
1 small onion, chopped
1 1/2 cup seasoned breadcrumbs
1 1/2 pound ground beef
1/2 cup grated Cheddar or American cheese
salt and pepper

directions

Pare eggplant and cut into 1" cubes. Cook in boiling salted water for 8 minutes, then drain.

Brown beef in a little oil. Add this and egg, tomatoes, onion and 1 cup of bread crumbs to the eggplant.

Place in a greased baking dish. Top with remaining buttered crumbs after sprinkling on grated cheese.

Bake at 350 degrees F for 45 minutes.
