Orange Ginger Couscous

ingredients
1 cup canned no-salt-added chicken broth
3/4 cup unsweetened orange juice
1 teaspoon minced crystallized ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground red pepper
1 cup couscous, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons couscous, uncooked
1/2 cup raisins
orange rind strips (optional)
directions
Combine the first 6 ingredients in a medium saucepan and bring to a boil. Remove from heat and stir in couscous and raisins. Cover and let stand for 5 minutes or until liquid is absorbed and couscous is tender.
Fluff couscous with a fork before serving. Garnish with orange rind, if desired. Serve immediately.
