ingredients
2 (8-inch size) flour tortillas
4 slices cooked roast beef
1/2 cup shredded Monterey jack cheese
2 tablespoons salsa
1 tablespoon sliced canned jalapenos
directions
Soften the flour tortillas as directed on the package.
Top each tortilla with two slices of the roast beef. Sprinkle half the cheese down the center of each tortilla. Divide the salsa and jalapenos between the tortillas. Roll up the tortillas tightly.
Place each filled tortilla on a microwave-safe plate. Cover with waxed paper. Microwave on high heat for 1 1/2 minutes or until the cheese has melted.
Cut each roll-up into serving pieces and serve immediately.
