Wake up to a delicious breakfast with this overnight slow cooker recipe. The layered ingredients can be changed to suit your tastes (try sausage instead of ham, for instance). It's always a hit and perfect for weekend guests.

ingredients

32 ounces frozen hash browns, not thawed
1 pound cooked ham, cubed
1 onion, diced
1 green bell pepper, seeded and diced
1 1/2 cup shredded cheese, your favorite kind, or a blend
12 eggs
1 cup skim milk
1 teaspoon salt
1 teaspoon black pepper

directions

Alternate layers of hash browns, ham, onion, bell pepper, and cheese in the crock pot until you've used up all the ingredients.

In a bowl, combine the eggs, milk, salt, and pepper and beat with a whisk until blended.

Pour the egg mixture over the ingredients in the crock pot. Cover and cook on low overnight (10 hours or so). If your crock pot cooks "hot", cook on the warm setting instead or cook for a shorter time.

    I tried it for my co-workers & it burned around the edges. Although they said it was good, the burnt taste permeated the whole thing. I cooked it the suggested 12 hours but could smell it burning in the middle of the night. A notation needs to be made that you may have to adjust the cook time based on your crockpot.

    I thought this was quite good. I did salt and pepper the potatoes at each layering because I wasn't sure if they'd really get enough seasoning otherwise Then with the egg mixture I cut the salt and pepper in half.

    My crock pot cooks faster so I have to cook this on low for 8 hours - no more. It's very good. The skim milk helps keep the calories down (some versions call for cream).

    I've tried a few other overnight crock pot breakfast recipes and they don't always turn out as good as I would hope. This one definitely worked well. I think it's because of the layers of hash browns as they help sort of divide the layers and they cook more evenly. The whole family liked it and we had leftovers that were gone by lunchtime.

    I have been making this casserole since 2009, primarily for a group of 10 friends that graduated in 1967. We gather from around the country for a long weekend and this is the recipe they have requested every year. The only adjustment is I use ground spicy pork sausage instead of ham. Delicious!

    I made this for a co-worker brunch and it turned out Great. I used chopped sliced ham, as it is cheaper, and finely diced the veges (using a minichopper) so you got the flavor and not a bit of pepper or onion. I also used Extra Sharp Chedder because I thought the ham may overpower the casserole. Anyway, I will defenitely make again!

    We needed a good breakfast for ~ 50 people who were working Saturday morning, so I passed out the ingredients and recipe to four other people to make in their crockpots overnight. All five crockpots were overdone... some were burnt on the edges. Reduce cooking time to five hours instead of 10.

    • Unfortunately, crock pots all cook differently these days. So a recipe that works for one person may not work for another as written. Always take into account your particular model when using recipes. I have one crock pot that cooks "hot" and one that cooks normally. I can use the normal one for recipes with long cooking times whereas the "hot" one has to be adjusted for.

    This was great for a late brunch! Since some of the comments said that 8 hours was too long to cook this, I cooked it 5 hours & had it at noon. Used sausage instead of ham--much better flavor that way. Also added a few plum tomatoes (cut up) & a little seasoned salt (Tastefully Simple version, but Mrs Dash would be great too). My daughter had 3 helpings! My "I don't eat eggs" kid even liked it!

    It was ok. Nothing to rave about. All the great reviews may have given me high expectations. I ate it, but my kids totally turned their noses up to it. The flavor was good and it smelled good, but I found the hashbrowns to be sort of mushy and the eggs had a weird consistency. I'm going to try one of the crockpot oatmeal recipes next.

    I guess that I did something wrong. It smelt good ,peroid..... After 8 hours, the appearance was very unappetizing, the edges were burnt, and it was almost tasteless. What happened to the yellow eggs and cheese??? Everything was like brown mush

    I made this with sausage instead of ham and chopped green onion instead of green pepper and it turned out yummy. I also halved the recipe. I wouldn't try that in a large crockpot though.

    This breakfast was a hit when I served it to a family gathering. I had to copy the recipe to give out to everyone. The only thing I would change is the cooking time. I put it on at 12:00 midnight and by 8:00 a.m. it was already a bit overdone.

    I put this together at 9PM last night for a teachers breakfast this morning. Thinking it would be nice to serve them something hot. Fortunately, I got up to check it at 1:30AM. It was basically done! I lowered the temp from low to simmer. At 5:30AM, it was burnt around the edges. I have never burned anything in a crockpot! The hashbrowns are almost unrecognizable. I had to take it all out, remove the burnt spots and put it back in. Added more cheese and salt then, too. Since it is kind of expensive to make (the ham), I sure didn't want to throw it away. I think if I make this again, I will just get up early and know it will be done in about 4 hours. Will probably use sausage or bacon next time instead of ham.

    • Some newer crockpots (one brand particularly) heat far hotter than older (original) models for which the majority of crockpot recipes were written.

    I tried this out on my family prior to making it for a work pot-luck. It got rave reviews. I used a little less potato and more ham than the recipe called for. I also sprinkled the cheese in with the layers instead of all on top. Cooked for 10 hours or less. Really easy, really good!

    I made this with bacon and it ended up a bit dry, and the whole thing ended up tasting like ham. Needs something to add some moisture. Won't make this again.

    I have a lot issues with recipes, trying to feed may large family. I am always worried about picky eaters. My family LOVED this. The kids even went back for seconds. I am making it again for the second time and I wanted everyone know that this recipe even pleases the pickiest of eaters.
