Easy Gingerbread

ingredients
2 cups flour
1 cup sugar
1 cup dark molasses
1 cup vegetable oil
2 eggs
4 teaspoons cinnamon
1 cup milk
1 tablespoon vinegar
1 teaspoon baking soda
1 teaspoon ginger
1 dash nutmeg
directions
Mix milk with vinegar until blended and let stand 15 minutes.
Mix all ingredients together and place in a greased and floured 13x9 inch pan.
Bake at 350 degrees F for 35 minutes.
Top with powdered sugar, whipped topping or lemon sauce.

I also thought it was tasty and easy...I wanted it to be a bit healthier though, so I replaced the oil with 2 cups mashed banana instead, reduced the sugar/molasses a lot, and added dates and honey for sweetness. Didn't have any plain vinegar, so added apple cider vinegar (don't know if that impacted taste) Also added more of all the spices. Then baked this all in a loaf tin...really incredible results...highly recommended!!

This recipe is ridiculously easy to make with ingredients most people already have on hand in the pantry. It is very light and moist. My dear husband, who is very selective in the foods he likes, raved about how delishes he thought this was. Definitely a keeper and highly recommended.
