12 pounds fresh pork loin roast, boneless
8 pounds sauerkraut, canned or bagged
1 quart applesauce
96 frozen potato pierogies
Place pork roast fat side up in a roasting pan, season with salt and pepper and cover.
In a 350 degrees F oven, roast pork 35-40 minutes per pound or until internal temperature is 180F.
Add sauerkraut half way through the cooking process.
Next add the apple sauce and pierogies. Cook for an additional 20-30 minutes.
To serve, slice pork and place over pierogies and sauerkraut.
Can be held on a steam table for up to 45 minutes.
