This delicious bisque recipe comes from the Simon Pearce restaurant. It is the perfect fall dish, made with butternut squash, onion, cream, apple cider, and spices.
2 pounds butternut squash, peeled, seeded and cut in cubes
1 medium onion, finely diced
1 cup heavy cream
1 cup apple cider
1 1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
8 ounces unsalted butter
1/2 cup good maple syrup
salt and pepper to taste
Bring a pan of lightly salted water to a boil over medium-high heat. Add the squash and onion and cook until the squash is tender. Drain well then place the squash and onion in a blender or food processor and puree until smooth.
Return the squash to the pan and add the remaining ingredients. Bring just to a simmer over medium-low heat and stir occasionally until heated through.
Adjust the seasoning as needed with salt and pepper.

This bisque is awesome!!!! I used fresh butternut squash that was pre-cubed, added finely minced onion & one chopped apple, (didn't have any apple cider). I simmered the mixure for about 25 min, cooled it than pureed it. After that I added the butter, spices, maple syrup & simmered until the butter melted. I then added light cream. Wow with a slice of Irish soda bread this was fantastic!!!!
