ingredients

1 eggplant, ends trimmed, cut lengthwise in 1/2-inch thick slices
1 pound asparagus, ends trimmed
2 tablespoons seasoned olive oil

directions

Preheat grill on HIGH for 10 minutes.

Arrange eggplant slices on baking sheet; sprinkle with salt. Let stand 30 minutes. Pat with paper towel to remove moisture. Drizzle eggplant and asparagus with oil. Salt asparagus to taste.

Arrange vegetables on grill; cook about 2 minutes. Turn. Continue to grill until browned and pliable, about 2 minutes longer. Remove from grill and cool slightly.

To assemble, arrange asparagus spears on top of eggplant slices. Roll into bundles.
