Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.


1 can whole kernel corn
1/2 cup vegetable oil
2 cups sour cream
8 ounces grated Cheddar cheese
6 ounces chopped jalapeno peppers
2 cups self rising corn meal
4 eggs, beaten
1 medium onion, finely chopped
4 strips bacon, cooked crispy and crumbled
Preheat oven to 350 degrees F. Grease a 13 x 9 x 2 inch pan.
Combine ingredients and pour into pan. Bake about 1 hour at 350 degrees F (my electric oven requires 1 hour and 10 minutes). Allow at least 10 minutes to cool before cutting.
