Cookie Pie Crust
1 1/2 cup all-purpose flour
6 tablespoons sugar
3/4 cup lightly salted butter
Glaze
1 cup water
1 cup sugar, divided
1 cup fresh strawberries
3 tablespoons cornstarch, MIXED WITH
3 teaspoons water
1/8 teaspoon salt
Filling and Topping
3 cups fresh strawberries
whipped cream
Preheat oven to 350 degrees F.
To make crust, sift flour with sugar; cut in butter until mixture is mealy. Press onto bottom and sides of 9-inch pie pan. Bake 15 to 20 minutes. Cool.
To make glaze, simmer water, 3/4 cup sugar, and strawberries 5 minutes, until syrupy. Stir in cornstarch and water, remaining 1/4 cup sugar, and the salt. Simmer 3 minutes longer, until thick. Cool slightly.
Fill crust: Place strawberries in shell. Pour glaze over berries. Chill 2 to 3 hours, just until set. Serve with whipped cream.
