Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Chewy Chocolate Krispy Treats

ingredients
3 tablespoons margarine or butter
2 tablespoons unsweetened cocoa powder
1 package (10 ounce size) regular marshmallows
OR
4 cups miniature marshmallows
1 teaspoon chocolate flavoring
6 cups puffed rice cereal
directions
Melt margarine in large saucepan over low heat. Add cocoa powder and marshmallows and stir until completely melted. Remove from heat. Stir in chocolate flavoring.
Add the cereal. Stir until well coated.
Using buttered spatula or waxed paper, press mixture evenly into 13 x 9 x 2-inch pan coated with cooking spray. Cut into squares when cool. Best if served the same day.
Optional: add 1.5 ts peppermint flavoring for mint krispy treats.
MICROWAVE DIRECTIONS: In a microwave safe bowl, heat margarine and marshmallows at HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Stir in chocolate flavoring. Follow steps 2 and 3 above. Microwave cooking times may vary.

For best results, use fresh marshmallows. 1 jar (7 oz.) marshmallow creme can be substituted for marshmallows. Diet, reduced calorie or tub margarine is not recommended. Store no more than two days in airtight container.
