1 tablespoon grated lemon peel
1 1/2 teaspoon ground nutmeg
1 gumdrop
1 package (18.25 ounce size) yellow cake mix, batter prepared according to directions
1 1/2 cup confectioners' sugar
1 tablespoon lemon juice
1 tablespoon water
3 tablespoons granulated sugar, divided
red, blue, yellow, and green food color
Preheat the oven to 350 degrees F. Coat a 9 by 13-inch baking pan with nonstick cooking spray.
Add the lemon peel, nutmeg, and gumdrop to the cake batter and bake in the prepared pan according to the package directions.
Cool completely on a wire rack. In a small bowl, combine the confectioners' sugar, lemon juice, and water until the mixture forms a creamy glaze.
Spread the glaze over the top of the cake. Place 1 tablespoon granulated sugar into each of 3 small resealable plastic storage bags. Add 1 drop of red and 1 drop of blue food color to one bag to create purple sugar; mix well. Add 2 drops of yellow food color to another bag; mix well. Add 2 drops of green food color to the remaining bag; mix well. Sprinkle the colored sugars over the glaze to decorate as desired.

Delicious cake. I made it for coworkers and it was such a hit I made 2 more that weekend to bring to family. I did substitue a small plastic baby for the gumdrop and stuck it in the cake after it was done.

Okay...I teach third grade and have been planning to talk about Epiphany with my class. I arrogantly assumed the bakery I've been using for 8 years would have the cakes on hand for the big event. I discovered my foolishness too late to go elsewhere. This recipe was easy, quick, and it saved my harried hide. Thanks for posting it!
