Spinach And Macaroni Casserole - CDKitchen.com

ingredients

2 packages (10 ounce size) frozen spinach, defrosted and drained
OR
2 pounds fresh spinach, washed and cut finely
1 cup elbow macaroni
6 eggs
4 ounces cottage cheese
1/4 cup feta cheese crumbled (optional)
1 cup grated parmesan or romano cheese
1 teaspoon salt
1 teaspoon baking powder (optional)

directions

Prepare spinach and drain well. Cook macaroni as directed on label.

Beat eggs well, then mix with cottage cheese, feta, Parmesan cheese, baking powder and salt in large bowl and mix well.

Place in greased and heated 9x9 inch baking dish and bake in preheated 400 degrees F oven approximately 25 minutes.
