Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

under 30 minutes
ingredients
1 cup orzo pasta
1 tablespoon butter
1/2 cup chopped green onions
6 ounces Canadian bacon
2 cups diced asparagus spears (2 inch)
1/2 teaspoon lemon pepper
1/2 teaspoon salt
1/2 cup non-fat milk
2 tablespoons shredded fresh Romano cheese
directions
Prepare orzo as directed on the package (usually boil 6-8 minutes). Drain.
In large sauce pan saute onions and bacon in butter. Cook and stir for 1-2 minutes, or until onions and meat are heated through. Add asparagus and cook until tender. Stir in remaining ingredients and cooked orzo.
Serve warm and top with shredded Parmesan or fresh basil, if desired.
For best results, do not overcook the orzo. The orzo should not be cooked for more than 8 minutes, and it should still be firm in texture.
