There's nothing worse than lukewarm sour cream or soggy tortilla chips to spoil a nacho platter. A proper nacho bake is all about the right layers, and this recipe does it perfectly.
1 pound ground beef
1 package taco seasoning mix
1/4 cup water
1 can (16 ounce size) refried beans
1/2 cup finely chopped onions
1/4 cup finely chopped green bell pepper
1 cup grated mild Cheddar cheese
nacho tortilla chips
To Serve
sour cream
chopped green onions
diced tomatoes
Preheat the oven to 400 degrees F.
In a large skillet over medium-high heat, brown the ground beef and drain off any excess grease. Add the taco seasoning and water. Cook, stirring frequently, until the mixture thickens. Remove from the heat.
Spread the refried beans in the bottom of a baking dish. Sprinkle evenly with the chopped onions. Spread the taco meat mixture over the top of the onions.
Place the baking dish in the oven and bake at 400 degrees F for 15 minutes. Remove the baking dish from the oven and add the nacho chips around the edge of the baking dish. Sprinkle the meat with the green bell pepper and Cheddar cheese. Return the baking dish to the oven and bake for 5 more minutes or until the cheese melts.
Garnish the casserole with sour cream, chopped green onions, and diced tomatoes. Serve hot with additional nacho chips.
