Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Smoked Portobello Cappuccino Soup

This rich, double-mushroom soup gets its name because it is served in demitasse cups (like cappuccino is). You can, however, serve it in any bowl you wish.
30-60 minutes
ingredients
2 cloves chopped garlic
1/2 cup chopped onions
1/2 cup chopped carrots
1/2 cup chopped celery
3/4 pound smoked portobello mushrooms (available in specialty stores)
1/2 pound sliced white button mushrooms
1/2 cup dry sherry
3 cups chicken stock
3 cups heavy cream
6 sprigs fresh thyme
salt and pepper, to taste
directions
Heat a small amount of olive oil in a heavy, large saucepan over medium heat. Add the garlic, onions, carrots, and celery. Saute for a few minutes or until the carrots start to soften.
Add the portobello and button mushrooms and stir to combine.
Pour in the sherry and stir well, scraping up and bits from the pan. Let simmer for 10 minutes.
Add the chicken stock, heavy cream, and fresh thyme. Bring just to strong simmer and let cook until the mixture thickens to desired consistency.
Season to taste with salt and pepper.
Serve in demitasse cups.
