Mushroom Bisque

ingredients
1/4 cup butter
1/3 cup onions, finely chopped
2 tablespoons lemon juice
4 cups chicken broth
1/4 teaspoon black pepper
1 cup light cream
1 cup heavy cream
3 tablespoons flour
1 pound fresh mushrooms, sliced
1 tablespoon salt
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon marjoram
1/3 cup sherry
chopped parsley (for garnish)
directions
In 3 quart saucepan heat butter until melted. Saute onions and mushrooms 4 to 5 minutes, stirring constantly Sprinkle with lemon. Blend in flour. Gradually stir in chicken broth.
Cook, stirring until slightly thickened. Stir in cream and sherry. Heat and serve.

this was very easy and came out good. it wasn't quite thick enough in the end so i did mix up some extra rue. added some sausage crumbles which enhanced the flavor a bit. would have added some tarragon if i had some on hand. i would definitely make this again.

Awesome! Outstanding! Easy to make. I threw some blue cheese crumbs on top. My wife loved it for Valentines Day! She didn't know I was a gormet chef. Neither did I.

Used about 6 different types of mushrooms including some reconsitituted dried varieties. Served at dinner pary; everyone raved. One thing I would note, the soup could be much thicker. I used corn starch rather than flour, doubled it and still thought it could have been thicker.
