1 1/2 pound medium shrimp, peeled and deveined
1/2 pound lasagna noodles
4 tomatoes, sliced and skinned
1 large onion, chopped
1 egg
16 ounces cottage cheese, creamy
1 package (8 ounce size) cream cheese
2 cans (10 ounce size) cream of shrimp soup
2 cans crab meat
1 cup Cheddar or Mozzarella cheese, grated
1 tablespoon olive oil
2 teaspoons dried basil, crushed
1 teaspoon salt, or to taste
1/2 teaspoon black pepper, fresh ground
2 teaspoons sugar

directions

Cook noodles until barely tender in a large pot of boiling water to which olive oil has been added; drain then rinse with cold water.

Combine shrimp soup and crab to make crab sauce, then set aside. In another bowl, blend cottage and cream cheeses with onion, egg, basil, salt, and pepper.

Line the bottom of a greased casserole dish with a single layer of noodles; top with 1/2 of cheese mixture, then a single layer of noodles, all the shrimp, then the crab sauce, remaining noodles, and remainder of cheese mixture.

Arrange tomato slices on top, then sprinkle with sugar. Bake at 350 degrees F (15 minutes), then coat with grated Cheddar or mozzarella cheese, and bake (45 minutes longer), or until crusty brown; allow to cool 15 minutes before serving.

    Definitely a winner! We added layers of baby spinch with each cheese layer to add a little color. Also added 1/2 tsp cayenne for a little kick.

    Had 6 people for dinner. All thought it was one of the Best Meals ever. Served fresh baby spinach with nutmeg as a side. Used Easy No-Boil Lasagna Noodles!
