1-2 hrs
ingredients
1 pound ground beef
1 small onion, chopped
1 can (14.5 ounce size) diced tomatoes with Italian seasoning
1 can (6 ounce size) Italian-style tomato paste
8 manicotti
grated Mozzarella cheese

For sauce, in a medium skillet, cook beef and onion over medium-high heat until beef is brown and onion is tender; drain. Add tomatoes, tomato paste and 1/2 cup water; blend well. Add salt and pepper to taste and heat through.
Spoon half the sauce into an 8" x 8" baking dish. Place manicotti over the mixture. Spoon remaining sauce over the top of the manicotti. Cover and bake in oven at 400 degrees F for 40 minutes.
Sprinkle with cheese and bake an additional 5 minutes to melt cheese.

Nutritional data has not been calculated yet.It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
