You'll think you're drinking somewhere on a tropical beach with this margarita made with fresh watermelon, coconut rum, shredded coconut, and lime juice.



coarse sugar
1 lime wedge
1/4 cup fresh lime juice
2 cups seeded and cubed watermelon
4 ounces coconut rum
1/2 cup shredded coconut
1 cup ice
Rub a wedge of lime around the rims of margarita glasses. Place some coarse sugar on a plate. Dip the rimmed glasses into the sugar to coat the edge. Turn the glasses upright and set aside to dry.
Combine the watermelon, coconut rum, shredded coconut, lime, and ice in a blender. Process until smooth.
Carefully pour the margarita into the sugar-rimmed glasses. Serve immediately. Garnish, if desired, with a slice of lime and a small chunk of watermelon.

Very refreshing summertime drink. Easy to make. Subtle coconut flavor with the mild sweetness of the watermelon. Overall, not one of those too-sweet margaritas!

Just a warning, if you don't like the texture of coconut you might not like this recipe. The coconut does get pulverized quite a bit but it is still detectable. The flavor of this is OUTSTANDING! And it does NOT taste like it has any booze in it. Great margarita!
