Peanut Butter No Bake Cookies

ingredients
3 cups old fashioned oatmeal (dry)
5 tablespoons peanut butter (reduced fat works great)
2 teaspoons vanilla extract
2 cups brown sugar
1/2 cup milk (non fat works great)
2 second spray butter flavored cooking spray (optional)
directions
Line two cookie sheets with plastic wrap (or place plastic wrap on a table or counter). Mix oatmeal, peanut butter and vanilla together in medium bowl. Set aside.
Stir brown sugar, milk and spray together in a medium saucepan. Cook over medium heat stirring occasionally - full boil for one minute. Immediately pour over oatmeal mixture and stir thoroughly but rapidly.
Spoon cookie size scoops (a heaping Tablespoon) onto plastic wrap and let set until firm.

These no-bakes were DIVINE! FAST, EASY . . . and a FUN TWIST on the chocolate no-bakes. Plus, I didn't feel as guilty eating them because I didn't have to add CUBES of butter! You've gotta try them. This recipe has been added to my favorites collection.

I LOVE these! I am a huge fan of the standard chocolate peanut butter oatmeal cookies; tonight, my other half and I were craving something sweet and instead of going out to get something I suggested making the old c/pb/o cookie standbys only to find I was out of butter. So I found this recipe and decided to give it a try...WOW!!! They almost have a butterscotch taste. This is definitely being bookmarked. I'm going to try this with cocoa to see if they turn out like the old favorite. Thanks for the recipe.
