Lemonade Meringue Pie

ingredients
1 1/2 cup sugar
1/3 cup cornstarch
1/4 teaspoon salt
1 1/2 cup hot water
4 eggs, separated
2 tablespoons butter
1 can (6 ounce size) frozen lemonade, thawed
1/4 teaspoon cream of tartar
1 (9 inch) pie shell, baked
directions
In a large saucepan, combine 1 cup of the sugar, cornstarch, and salt. Gradually stir in water. Stir in egg yolks, beaten, then add butter and lemonade. Cook over medium heat, stirring constantly, until mixture reaches a boil. Boil for 1 minute more. Let cool.
Preheat over to 400 degrees F. In a medium bowl, whip egg whites until frothy. Gradually beat in cream of tartar and remaining 1/2 cup sugar. Whip until stiff peaks form.
Spoon cooled lemon filling into pie shell. Cover filling with egg-white mixture and spread to edges of pie shell. Place in oven 8-10 minutes until light golden brown.

I've used this recipe a number of times and always gotten rave reviews. You need frozen lemonade concentrate that you can find in any grocery store in Canada or the U.S.. You can substitute lemonade with limeade if you want to make a lime pie which is also VERY good. I'm not sure of frozen lemonade or limeade concentrate availability in other parts of the world though.

This is the best!!! Was out of lemon pudding mix, and so was the store. This, a perfect substitute. Can't wait to try the limeade version. Thanks!!!

This sounds like a great idea - esspecially when you cannot find quality lemons. I haven't tried it yet but it sounds very easy, If you keep some lemonade in your freezer you could make it without going shopping - most people have everything else at hand in thier pantry. Thanks!! Susie
