Lemon Pudding And Marshmallow Dream Pie

ingredients
1 refrigerated pie crust, or homemade
2 tablespoons fresh lemon juice
2 cups water
1/3 cup sugar
2 egg yolks
1 package (4-serving size) lemon cook-and-serve pudding
2 tablespoons butter or margarine
1 jar (7.5 ounce size) marshmallow creme
1 container (8 ounce size) frozen whipped topping, thawed
1 small lemon, zest of
directions
Follow package directions for single pie crust, baked. Cool completely.
In a saucepan, combine juice, water, sugar, yolks and dry pudding mix. Whisk until well blended. Cook on medium heat until mixture comes to full boil, stirring constantly.
Remove from heat and stir in butter until melted. Cool for 10 minutes, stirring occasionally. Pour into crust and refrigerate for 1 hour or until completely cool.
Mix marshmallow cream and whipped topping until well blended and smooth. Spread over pie filling. Garnish with lemon zest. Refrigerate for 1 hour or until ready to serve.
