This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.

This easy pie is cool and refreshing and can be made with other gelatin fruit flavors for fun varieties.
2/3 cup boiling water
1 package (3 ounce size) lemon Jell-O
1/2 cup cold water
ice cubes
1 container (8 ounce size) Cool Whip
1 package (6 ounce size) graham cracker crumb crust
1 small lemon, sliced, for garnish
additional Cool Whip for garnish
Stir boiling water into Jell-O in large bowl 2 minutes or until dissolved. Mix cold water and ice to make 1 1/4 cups. Gradually add to gelatin, stirring until slightly thickened (consistency of unbeaten egg whites). Remove any remaining ice.
Stir in Cool Whip with wire whisk until smooth. Refrigerate 10 to 15 minutes or until mixture is very thick and will mound. Spoon into crust (There is likely to be some left over).
Refrigerate for 4 hours or until firm. Garnish the lemon jello pie with a lemon slice and a dollop of Cool Whip for each slice, just before serving.
