Oyster crackers are roasted with taco seasoning, garlic powder, oregano, and chili powder.
3 packages (10 ounce size) oyster crackers
3/4 cup vegetable oil
1 envelope taco seasoning mix
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon chili powder
Preheat the oven to 350 degrees F.
Combine the oyster crackers, oil, taco seasoning, garlic powder, oregano, and chili powder in a bowl and stir until well mixed. Pour the crackers out onto a large roasting pan or rimmed baking sheet. Drizzle any remaining oil in the bowl evenly over the crackers.
Place the pan in the oven and bake at 350 degrees F for 15-20 minutes or until golden brown, stirring occasionally.
Remove from the oven and let cool. Store in an airtight container at room temperature for up to 4 days.

Very good snack. I used a low sodium taco seasoning thinking it might be too salty otherwise but it was actually undersalted that way so use the regular taco seasoning.

I was looking for a recipe that I could just set out for people to nibble on while we prepared for a recipe testing event last summer. This was a hit! The crackers had plenty of crunch and the seasoning mix was tasty. I don't use packaged taco seasoning, I make my own and use it in recipes calling for the packaged stuff. It tastes just the same but contains less bad stuff. I'm not sure how long these will keep once made. Ours only lasted until the next morning when they were finished off :)
