1/2 cup tapioca starch (tapioca flour)
1 cup wheat starch
1/2 teaspoon salt
2 teaspoons vegetable oil
1 cup water
Mix starches, salt and oil in a metal bowl.
Bring water to a brisk boil in a small saucepan; then pour quickly over the starch, stirring it in with a strong pair of chopsticks.
Upturn the bowl over the dough for a few minutes, until partially cooled and the starch is thoroughly moistened.
Then knead lightly to a smooth, soft dough.
To roll out the dough, pull off walnut-size pieces and press into rounds with the fingers, or flatten with a cleaver or tortilla press.
