ingredients

1 1/3 cup kosher salt
1/2 cup sugar, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons sugar
2 whole bay leaves
1 tablespoon thyme
7 whole cloves
1/2 tablespoon allspice berries, crushed
1/2 teaspoon juniper berries, crushed
14 pounds turkey

In a large stockpot combine all ingredients and 2 gallons water. Bring to a rolling boil and remove from heat and cool to room temp. Add turkey breast side down and cover and refrigerate overnight. Bake the next day as usual.
