INGREDIENTS:
14 ounces artichoke hearts
1 package (12 ounce size) frozen ready to eat shrimp
2 cups garbanzo beans
1 medium red onion, chopped
3/4 cup small black olives
1/4 cup parsley
1/3 cup olive oil
2 tablespoons lemon juice
1/2 teaspoon crushed red pepper
1/4 teaspoon cumin
DIRECTIONS:
Combine first 6 ingredients. Whisk together last 4. Toss all together.
NUTRITION:
353 calories, 14 grams fat, 39 grams carbohydrates, 21 grams protein per serving.

This recipe is great, especially for people on the South Beach or other low carb diet. I chose to add 6oz of reduced fat free feta cheese to it and it turned out wonderful. Next time, I want to try kalamata olives instead of black olives to give it even more of a greek salad feel. The recipe is very oniony, so if you aren't that big of a red onion fan, I would recommend you use half of a medium sized one. Overall, its a YUM!
