ingredients

1 pound ground beef
1/4 cup chopped onion
4 eggs
1 can (5.5 ounce size) evaporated milk
1 envelope enchilada sauce mix
1/3 cup sliced pitted ripe olives
2 cups corn chips
1 cup shredded cheddar cheese
1 can (8 ounce size) tomato sauce

directions

Cook beef and onion in skillet until beef is browned and onion is tender; drain off fat.

Spread beef in bottom of 10x6 inch baking pan. Beat together eggs, milk, tomato sauce and enchilada sauce mix; pour over meat layer. Sprinkle with sliced ripe olives; top with corn chips.

Set oven at 350 degrees F. Bake, uncovered, for 15 to 25 minutes or till firm in center. Sprinkle with cheese and return to oven for 3 to 5 minutes.

    Instead of 4 eggs I used 3 oz cream cheese and 2 eggs. it made it thicker but I liked the consistency (since the quiche review sounded kinda of icky to me). I'll make it again my way for sure!

    This is a great dish, however reading the other review I had some Las Palmas red enchlida sauce, instead of making your own. I put chips on the bottom and at the top. when I didnt have enough enchilada sauce the second time i used tomato sauce, and a pack of enchilada sauce with water, cajun pepper. I mixed it with the las palmas and you couldnt even tell the difference. So if you didnt like the texture of the eggs, just get sauce. It works great. I also put refried beans on the top layer of chips after it was cooked, then cheese, it was great.

    The flavor was quite tasty. The texture wasn't what we were expecting - it had a quiche-like consistency to the egg mixture which threw us off at first.
