Queso Taco Casserole

Two ways to serve this taco bake: as a dinner casserole or as nachos. If you're going the nacho route, leave out the taco shells and use them to scoop up all the spicy, cheesy, baked taco goodness.

ingredients

1 pound ground beef
1 small onion, chopped
1 bottle (8 ounce size) taco sauce
3/4 cup water
1 can (4 ounce size) diced green chiles
1 package (1.25 ounce size) taco seasoning mix
1 package (12-count size) yellow or white corn taco shells, coarsely broken
2 cups shredded cheddar cheese

directions

Preheat the oven to 375 degrees F. Grease a 9-inch square baking dish.

Add the ground beef and onion to a large skillet over medium-high heat. Cook, stirring frequently, until the meat is cooked and the onion is soft. Drain off any excess grease.

Add the taco sauce, water, green chiles, and taco seasoning to the skillet. Mix well and bring to a boil. Reduce the heat to a simmer and cook, stirring occasionally, for 5 minutes or until the sauce thickens.

Place half of the broken taco shells on the bottom of the baking dish. Spoon half of the beef mixture over the shells. Sprinkle with half of the Cheddar cheese. Repeat the layers ending with cheese.

Place the baking dish in the oven and bake at 375 degrees for 20 minutes or until the middle of the casserole is bubbly and the cheese is melted.

Remove from the oven and let stand for 5 minutes before serving. Top with tomatoes, green onions, and sour cream as desired.
