ingredients
1 pound velveeta cheese, cubed
1 onion, chopped
1 can whole tomatoes
2 cans green chiles, chopped
1 small can evaporated milk
1 pound ground beef
12 corn tortillas
directions
Combine first 5 ingredients in saucepan, mixing well. Cook over low heat, until cheese is melted.
Brown hamburger in skillet, stirring until crumbly; drain. Soften tortillas in hot oil in skillet.
Spoon hamburger onto tortillas, rolling to enclose filling. Arrange seam side down in 9x11" baking pan. Pour cheese sauce over tortillas.
Bake at 350 degrees F for 25 to 30 minutes or until bubbly. Serve with Spanish rice.

I think this just became my new favorite quick and easy dinner! I used the mexican style velveeta and rotel tomatoes to give it more mexican flavor. I might even use the hot green chiles next time if I'm feeling adventurous.

I HAVE BEEN MAKING THIS RECIPE FOR OVER 30 YEARS. IT IS DELICIOUS!!!! THE ONLY DIFFERENCE IS I SOFTEN THE TORTILLA, DIP IN SAUCE, FILL WITH MEAT, ADD MORE SAUCE ON TOP AND SERVE. NO NEED TO HEAT OVEN. WHEN I MAKE THESE, THE FAMILY ALL INVITES THEMSELVES!
