Dough Enhancer

Want a better loaf of bread or more manageable dough? Add this enhancer to get great results every time.

ingredients

1 cup lecithin granules
1 tablespoon Vitamin C powder
1 tablespoon ground ginger

directions

Combine all the ingredients in an airtight container and store at room temperature for up to 1 month.

To use, add to your bread machine or dough recipe in equal amounts with the yeast. Example, if the recipe calls for 1 teaspoon of yeast, add 1 teaspoon of the dough enhancer to the recipe.

    Interesting. However, I'd use ascorbic acid powder or is that to which you are alluding? Thanks.

    • Ascorbic acid is a synthetic form of vitamin C, so yes, they are basically the same thing.

    I would like to know if this recipe adds a ginger taste to the bread?

    • No, it doesn't. When mixed with the other ingredients and used in the same proportion to the yeast in a recipe, the amount of ginger is quite tiny.
