Ascorbic acid is a synthetic form of vitamin C, so yes, they are basically the same thing.
I would like to know if this recipe adds a ginger taste to the bread?
No, it doesn't. When mixed with the other ingredients and used in the same proportion to the yeast in a recipe, the amount of ginger is quite tiny.
