ingredients
1 pound chicken giblets
1/4 pound chicken livers
1/2 pound ground pork
1 pound ground beef
1/4 cup oil
1 cup chopped onion
8 cloves garlic, finely chopped
1 cup chopped celery
1/2 cup chopped green onions
1/4 cup chopped parsley
1 teaspoon Worcestershire sauce
4 cups hot cooked rice
salt and pepper, to taste
directions
Put giblets and livers in separate saucepans, cover with water and simmer until tender. Chop fine and put in separate containers. Saute ground meat in oil until well done. Add giblets and simmer about 15 minutes.
Add onion, garlic, celery, and green onions and cook until tender. Add livers, parsley and Worcestershire. Cook about 15 minutes longer.
Mix in cooked rice, season to taste, and serve as side dish or dressing.

I have used this recipe for the last thirty years. My family (especially my son) and friends get distressed if I even suggest leaving it off the menu.
