A tasty fresh salsa made with tomatoes, green onion, bell pepper, jalapeno, and cilantro and served with festive blue corn tortilla chips.



3 medium tomatoes, peeled, seeded, and chopped
1/2 cup chopped green onions, white and green parts
1/2 cup chopped green bell pepper
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
1 jalapeno pepper, seeded and chopped
3 cloves garlic, minced
1/2 teaspoon salt
blue corn tortilla chips
Combine the tomatoes, green onion, bell pepper, and lime juice in a bowl. Mix well.
Add the cilantro, jalapeno, garlic, and salt. Mix well.
Serve the fresh salsa immediately with blue corn tortilla chips (or regular tortilla chips).

A wonderfully fresh salsa! I reduced the lime juice considerably and left the seeds and ribs from the jalapenos to make it extra spicy (love hot hot hot salsa!). Delicious and the blue tortilla chips add that festive touch!
