Wonderful Salsa

ingredients
8 cups peeled and diced tomatoes
2 1/2 cups diced onions
1 1/2 cup chopped green bell peppers
1 cup finely chopped jalapeno peppers
6 cloves garlic, minced
2 teaspoons ground cumin
2 teaspoons black pepper
1/8 cup canning salt
1/3 cup sugar
1/3 cup white vinegar
1 can (15 ounce size) tomato sauce
1 can (12 ounce size) tomato paste
directions
Let the diced tomatoes drain in a colander for 15 minutes.
Combine all the ingredients in a large pan over medium-high heat. Bring the mixture to a slow boil (adjust the heat as needed) and let boil for 10 minutes.
Divide the salsa among canning jars and seal as directed by the manufacturer. Process in a hot water bath for 10 minutes (or as recommended by the jar manufacturer).
The heat of the salsa can be adjusted by altering the amounts of the jalapenos and cumin.

This Salsa is Great! Very Flavorful and spicy! I used Chipolte instead of cumin once and that made it hotter still and used pepperoncini instead of jalapeno cause that's what I had in refrigerator and because of current salmonella problem with the japs. I also added a cup or fresh corn and this was good also and made a more colorful salsa. But it was a major hit in my salsa loving household.
