Spicy Thai Salsa

This tomato salsa might look like standard Mexican fare at first glance, but don't be fooled. Unmistakably Thai ingredients like fish sauce and shrimp paste give it a unique spin, and make it a sensational choice for fusion food like spicy Thai tacos topped with cilantro.

ingredients

1 tablespoon sunflower oil
6 shallots, peeled and halved
6 whole green chiles
6 cloves garlic, peeled
1 large tomato, seeded and finely diced
1 teaspoon shrimp paste
1 tablespoon fish sauce
2 tablespoons freshly squeezed lime juice
salt and freshly ground black pepper

directions

Preheat the oven broiler.

Place the oil in a bowl. Add the shallots, green chiles, and garlic and mix well to coat completely in the oil.

Place the vegetables on a broiler pan or rimmed baking sheet and place under the broiler for 6-8 minutes, turning once, until soft and slightly charred. Remove the vegetables from the oven and let cool slightly.

Chop the shallots and garlic and place in a bowl.

Slice the chiles lengthwise and scoop out the seeds. Finely chop the peppers and add to the vegetables along with the diced tomato.

In a small bowl, stir together the shrimp paste, fish sauce, and lime juice. Pour over the vegetables in the bowl and toss to coat them in the sauce. Season to taste with salt and pepper.

Serve warm or at room temperature.
