Fresh, homemade salsa with a kick is good for so much more than just tortilla chip dipping. Add to breakfast tacos, spread on quesadillas, or use as a burger topping.
2 tablespoons vegetable oil
1/2 cup finely diced onion
2 cloves garlic, crushed
1 can (15 ounce size) Italian plum tomatoes, drained and chopped
1/2 teaspoon ground cumin
1/2 teaspoon dried parsley flakes
2 teaspoons chili powder
Heat the oil in a skillet over medium heat. Add the onion and garlic and cook, stirring frequently, until browned.
Add the tomatoes, cumin, parsley, and chili powder. Mix well and let simmer for 15 minutes.
Cool to room temperature and serve or place in a covered container in the refrigerator until ready to use.

I'm not usually a fan of cooked salsa but I didn't have any fresh tomatoes and needed something to dip chips in. This turned out fantastic!! I did add a pinch or two of crushed red pepper flakes but otherwise followed the recipe to a "T".
