1 large sweet onion
3 medium tomatoes
1 clove garlic
1 tablespoon fresh cilantro
1 tablespoon fresh parsley
1 tablespoon olive oil
1 tablespoon red wine vinegar
2 tablespoons fresh lime juice
Combine the onion, tomatoes, garlic, cilantro, parsley, olive oil, vinegar, and lime juice in a food processor. Use the pulse mode to coarsely chop the ingredients (do not puree them).
Transfer to a bowl and refrigerate for 3-4 hours before serving. Serve with tortilla or corn chips.
