Heart Healthy Couscous Salad

ingredients
1 cup water
3/4 cup uncooked couscous
1 cup shredded fat-free mozzarella cheese
1 cup diced seeded tomatoes
1/2 cup finely snipped fresh parsley
12 kalamata olives, finely chopped
1 teaspoon grated lemon zest
2 tablespoons fresh lemon juice
1/2 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
2 cups coarsely chopped fresh spinach leaves
directions
In a small saucepan, bring the water to a boil over high heat. Remove from the heat. Stir in the couscous. Let stand, covered, for 5 minutes, or until the liquid is absorbed. Fluff the couscous with a fork.
Spread the couscous in a thin layer on a baking sheet or sheet of aluminum foil. Let stand for 5 minutes, or until cooled.
Meanwhile, in a large bowl, stir together the remaining ingredients except the spinach. Add the couscous. Toss gently to blend. Add the spinach and toss gently.

It was a great way to add a healthy carb to the meal. I actually omitted olives, and used less pepper flakes as per my likes. Overall taste was good.

I thoroughly enjoyed this refreshing healthy salad. Having traveled to the Middle East recently,find the salad to be very reminiscent of the salads I had eaten there. For my own taste preference, I put in a little less lemon juice and a little less red pepper flakes - otherwise followed the recipe as written. It was great!
