ingredients
2 tomatoes, cored and chopped
1 English cucumber, chopped
1 can (15.5 ounce size) chickpeas, drained and rinsed
2 tablespoons red wine vinegar
1 tablespoon olive oil
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon fresh basil, chopped
directions
In a large bowl, combine the tomatoes, cucumber and chickpeas.
In a small bowl or measuring cup combine the red wine vinegar, olive oil, mustard, salt, black pepper and basil; stir with a whisk. Drizzle over tomato mixture, tossing gently to coat.
Chill and serve using a slotted spoon.
