Baked Spicy Beef Chimichangas

ingredients
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
8 ounces Mexican four cheese blend, divided
1 can (15 ounce size) refried beans
1 can (4.5 ounce size) chopped green chiles, drained
1/2 cup picante sauce
12 (8 inch size) flour tortillas
directions
Cook first 3 ingredients in until beef is no longer pink. Drain. Stir in 1 1/2 cups cheese, refried beans, chiles, and picante sauce. Place 1/4 cup mixture just below center of each tortilla.
Fold opposite sides of tortillas over filling, forming rectangles. Secure with toothpicks.
Place on a baking sheet and coat chimichangas with cooking spray.
Bake at 425 degrees F for 8 minutes; turn chimichangas over and bake 5 minutes more. Remove picks and serve immediately with remaining 1/2 cup cheese and other toppings as desired(sour cream, salsa, guacamole, etc).

This recipe was a wonderful surprise! What sounded like an ordinary dish, turned out to be quite good. Vary the flavors with different cheese blends. We used a green chile picante sauce which added a more mellow, smoky flavor. You can use small flour tortillas and make these into appetizers and serve with salsa, guacamole, cheese or other dipping sauces. Could easily substitute shredded chicken or ground turkey for the beef.
