Yorkshire Salad

ingredients
1 large onion
1/4 cucumber
1 pinch sugar
malt vinegar
directions
Coarsely chop the onion and the cucumber put into a medium sized bowl and sprinkle with the sugar. Then cover with vinegar and leave for a few days.
This will keep for a few weeks, if there is any left. Serve on Yorkshire puddings or suet dumplings.

My mother used to make this it was delicious. But she would heat the malt vinegar and sugar in a pan and then pour over the onion and cucumber in a bowl. We would eat it with a salad or have it in sandwiches especially beef for Sunday tea.
