15 ears fresh corn on the cob
1 small head chopped cabbage
1 cup chopped onion
1 cup chopped green bell peppers
1 cup chopped red bell pepper
2 1/2 cups sugar
2 tablespoons dry mustard
1 tablespoon celery seed
1 tablespoon mustard seed
1 tablespoon salt
1 tablespoon minced garlic
2 tablespoons red pepper flakes, crushed
1 tablespoon turmeric
1 quart vinegar
1 cup water
Boil ears of corn 5 minutes; cut corn from cob. Combine corn with remaining ingredients in a large saucepot.
Bring to a boil; reduce heat and simmer 20 minutes. Pack hot into hot jars, leaving 1/4-inch headspace. Adjust two-piece caps. Process 15 minutes in a boiling-water canner.
