Sweet And Sour Pickled Prawns

ingredients
60 medium prawns (shelled and deveined)
1 yellow bell pepper
1 red pepper
1 red onion
2 lemons
15 ounces olive oil
6 ounces cider vinegar
6 limes, juiced
3 teaspoons dry mustard
3 tablespoons Tabasco
1 teaspoon salt
ground black pepper
2 teaspoons sugar
directions
Place prawns, and rough cut peppers, onion, lemons in a container. Mix all the other ingredients together and pour over. Cover with cling film and a lid and refrigerate for 2-3 days.
Use the vegetables as a garnish. Looks good served at a buffet table in a large white shallow bowl with the vegetables in the middle and the prawns around the outside. Best with the fan part of the tail left on.
