Easy Freezer Sweet Pickles

If you love pickles but don't want to go through the hassle of canning them, try this easy freezer sweet pickle recipe instead. All you need are cucumbers, onions, salt, vinegar, and sugar.

ingredients

2 quarts cucumbers, thinly sliced
2 onions, sliced
2 tablespoons salt
1 cup white vinegar
3/4 cup sugar

directions

Mix cucumbers and onions together and sprinkle with salt; mix well and let stand 2-3 hours. Rinse and drain well.

Mix vinegar and sugar until sugar is dissolved. Put cucumbers and onions in freezer containers or freezer bags; pour vinegar and sugar mixture over cukes and onions.

Freeze 3 weeks before eating, the longer you let them sit the sweeter the pickles. Thaw in refrigerator or in cold water.

    Absolutely fool proof recipe. If you don't like sweet pickles you can cut down the sugar and add crushed red pepper and dill.

    I've made freezer pickles with small cucumbers and onions in the past but can't remember just how many small cucumbers I used. Can somebody help me out?? My recipe calls for 2 qts. of thinly sliced cucumbers but I am not sure how many cucumbers I need. Would appreciate an answer from somebody in regard to this matter. Thanks!
