Pork Dumplings (Gyoza) With Dipping Sauce

Pork filled dumplings are steamed and served with a homemade dipping sauce.

ingredients


Dumplings

3/4 pound ground pork
1/4 cup chopped fresh cilantro
1/4 cup chopped green onion
2 cloves garlic, finely chopped
1/4 teaspoon ground ginger
1 pinch white pepper
1 tablespoon seasoned rice vinegar or mirin
1 tablespoon tamari
1 package (40-count size) wonton wrappers

Dipping Sauce

1/2 cup tamari
1/2 cup rice vinegar
1 teaspoon finely chopped fresh ginger root
1 teaspoon dark sesame oil
1 teaspoon honey or sugar
2 cloves finely chopped garlic
1 pinch crushed red pepper flakes

directions

For Dipping Sauce: Whisk all ingredients together. Taste and adjust seasoning. Set aside.

For Dumplings: Combine pork, cilantro, green onion, garlic, ginger, pepper, rice vinegar and tamari in a medium bowl. Stir well to combine thoroughly.

Following the instructions on the wonton wrapper package and fold a heaping teaspoon of pork filling into each wrapper and set aside on wax paper.

Steam the dumplings in a large skillet in a single layer with just enough water to cover the bottom for 15 to 20 minutes (covered). Remove a dumpling and cut into it to make sure that the pork is fully cooked.

Carefully remove dumplings with a slotted spoon to a platter. Serve immediately with dipping sauce.
