Grilled Raspberry Tortillas

ingredients
4 low-fat flour tortillas
2 ounces shredded fat-free mozzarella cheese
1/2 cup red raspberry preserves
directions
Heat a heavy griddle or skillet over medium heat. Place 1 tortilla in skillet and heat about 30 seconds or until softened. Remove from skillet.
Place 1-1/2 tsp cheese in middle of tortilla. Place 1 Tbsp preserves over cheese. Sprinkle cheese over preserves.
Fold bottom of tortilla over cheese. Fold in sides and roll tortilla to make a tight packet. Repeat process until all tortillas are prepared.
Place all tortilla packets, seam-side down, on a griddle and cook over med heat 3-4 minutes per side or until browned.
