ingredients
1 (10-inch size) unbaked pie shell
3 tablespoons finely diced onion
6 ounces corned beef
1 cup sauerkraut, drained
6 ounces grated Swiss cheese
5 eggs
2 1/2 cups half and half
1 tablespoon sugar
1 dash cayenne pepper
directions
Preheat oven to 375 degrees F.
Evenly distribute onion, shredded corned beef, and sauerkraut over bottom of the unbaked pie shell. Sprinkle cheese over all.
Whip the eggs, adding the sugar and dash of cayenne pepper. Combine with cream and pour slowly over ingredients in the pie shell. Place on baking sheet and bake in oven until lightly browned and knife inserted halfway between side and center comes out clean.
