ingredients
6 pita breads (7-inch size)
2 pounds cucumbers
1/3 cup lemon juice
6 cups iceberg lettuce
1/3 cup extra virgin olive oil
3 cups fresh parsley
2 cloves garlic
1/2 cup fresh mint leaves
1 1/2 pound firm, ripe tomatoes
salt and pepper
directions
Heat oven to 350 degrees.
Tear pita bread into 1-inch pieces, then spread evenly on 10x15-inch baking trays. Bake until bread is lightly browned and crisp. Let cool.
In large bowl, mix lemon juice and olive oil. Rinse tomatoes, core if necessary, then chop. Peel cucumbers and chop.
Add tomatoes, cucumbers, lettuce (rinsed and crisped, torn or cut into bite-sized pieces), chopped parsley, chopped mint and bread to bowl. Mix well; add salt and freshly ground pepper to taste.
Serve at once; bread will become soggy if left to stand.
