Corn Salsa with Cumin

ingredients
2 cups fresh corn kernels
2 tablespoons olive oil
2 teaspoons ground cumin
2 jalapeno peppers, seeded and diced
1/4 cup water
2 tablespoons lime juice
1/4 cup finely chopped fresh cilantro
3 green onions, finely chopped
1/4 cup diced plum tomatoes
directions
Preheat the oven to 400 degrees F.
Combine the corn, olive oil, cumin, jalapeno, and water in a wide baking dish. Place the dish in the oven and bake at 400 degrees F for 30 minutes, stirring occasionally, until the corn is lightly browned.
Remove the pan from the oven and let the corn mixture cool slightly.
Combine the corn, lime juice, cilantro, green onions, and tomatoes in a bowl. Gently toss to combine. Season as needed with salt and pepper.
Serve at room temperature or chilled.
